Amazing jam, made in minutes. No sugar, no rubbish. Simple to make, and totally delicious. The magic of this jam is the chia seeds, they make it like proper jam texture. Plus the added benefit of a heap of fiber, omega-3 fats, protein, vitamins and minerals.
So I cooked this up using left over chicken, and any veg I had, its amazing and has now become a bit of a favourite. Yes I do cheat and use a red thai curry paste, but I always buy a high quality organic one with no nasty rubbish in it. The reason being, that I love to make this meal quickly as a deep flavoured speedy supper, making a curry paste, is not quick.
These guys are so simple, quick and easy to make. They taste amazing, and are great with a whole load of different things. Packed full of protein, iron, magnesium and rich in dietary fibre. Not even to mention all the nutritional goodness in all the spices.
