Dreaming of summer salad

I love winter, getting wrapped up and going on frosty walks. But there is just something about summer time food that gets me really excited. For me, it means quick, fresh, simple and delicious. Which is exactly what this salad is!

Serves 4

  • 4 peaches
  • 2 packs of parma ham
  • 2 big mozzarella balls
  • 1 pack of watercress salad
  • 1 pack of baby gem lettuce
  • 2 tbsp balsamic glaze
  • 1 tbsp extra virgin olive oil

Heat up a grilled pan, on high. Chop each peach into 6 or 8 wedges. Once the griddle pan is hot, pop them on, flesh sides down. The aim is to char them, not really cook them. Once you have a nice char on one side, flip them over and do the same on the over side. Then remove from the heat and leave to cool.

Tear up the lettuce and watercress into a large serving bowl. Or individual small bowls. Then tear up the mozzarella into small chunks and chuck this all over the salad. Chop or tear up the parma ham and sprinkle this over the salad.

Lastly add the grilled peaches, drizzle on the olive and and balsamic, crack on some black pepper. You’re done!

I quite like to leave this with the tasty bits on the top rather than mixed in with the leaves.

It’s super easy but a banging combination and is a bit of a fancy posh salad for a BBQ!
