This salad is super simple, but so delicious and interesting
Serves 2 (or more if just a side dish)
•3 raw whole beetroots (the kind with roots, leave and dirt on, not in a vac pac)
•1 pack of feta
•1 handful of pumpkin seeds
•2 tbs extra virgin olive oil
•juice of 1/2 a lemon
Peel and cut the beetroot as thinly as possible. Drizzle with olive, lemon juice, and pepper.
Crumble over the feta, and sprinkle on the pumpkin seeds.
Drizzle with olive, lemon juice, and season with pepper (no salt as the feta is salty enough).
